I just came home from school and my mum made this amazing Lemon cake and I thought that I HAVE to share it with all of you, because it’s just so delicious. It’s super simple and tastes amazing and you probably already ahem all the ingredients in your house.
You will need:
- 240g softened unsalted butter
- 200g caster sugar, plus a little extra for sprinkling (I think it tastes so much better with a little sugar sprinkled on the top)
- grated zest and juice of 1 lemon
- 3 large eggs
- 210 self rating flour
- 90g plain flour
- Preheat the oven to 170C/338/gas mark 3. Cream the butter and sugar, then add the lemon zest. Add the eggs one at a time with a tablespoon of flour for each. Then gently mix in the rest of the flour and, finally, the lemon juice. Sprinkle with the cast sugar (about 2 tablespoons should to it) as it goes in the oven, and bake for 1 hour or until a cake tester comes out clean (you can just use a butter knife if you don’t have a cake tester), Remove to a wire rack, and let cool in the tin before turning out. Makes around 8-10 slices.
